This is best accomplished by taking a fish that has been gutted and washed and stuffing the open cavity with lemon grass, rice, or even just a few vegetables that have been salted and peppered lightly. After the fish has been stuffed with the appropriate filling wrap it in some aluminum foil tightly and place it on the outer edge of a campfire away from the flames. Turn the wrapped package every 5 to 10 minutes or so and in about 30 to 60 minutes depending upon the heat of the campfire the fish will be done and ready to eat. This is a great way to prepare fish in camp, because the fish cooks in it's own juices and gives a wonderful flavor to the stuffing.
Other great camping dinner recipes using fish include making fish and rice, which can be completed using only one cooking pot. Take one pound of fish fillets and cut them up into one inch squares, along with a half cup of chopped bell peppers, onion, and a clove of garlic that has been diced and set it aside either covered or wrapped. Place a pot of water on the campfire and when it begins to boil add the fish and other ingredients to the pot and allow them to cook for about 10 minutes. Remove the pot from the fire and add the recommended amount of instant rice to the water and cover until the rice has absorbed the water and is finished cooking. When cooking is complete, it is a simple job to serve the fish and rice with a little butter and lemon pepper salt sprinkled on top with some bread to make a great camping dinner that is not soon to be forgotten.
